Watermelon - Cucumber Smoothie

This smoothie tastes like Summertime in a glass.  

I really enjoy a watermelon/cucumber martini so that's how I came up with the idea of this smoothie.  I was nervous about adding the coconut milk but that's where my hesitation ended as I already knew I enjoyed the watermelon and cucumber flavors mixed together.  This smoothie has an almost tropical taste to it.  The sweetness of the watermelon and the freshness of the cucumber pair so amazingly well together and the smoothie is not overly sweet as the cucumber balances out the sweetness of the melon.

 Tweak the ingredients as needed.  Add more watermelon if you prefer that flavor over the cucumber or vice versa.  I also love the pink color of this drink.

Add the ingredients below into your blender of choice, be sure to add the coconut milk first) and blend until it is the desired consistency adding more or less milk to reach the desired consistency.

The hubby enjoyed this smoothie as well but he prefers the Beginner Berry Smoothie (he's all about Blueberries right now).

1 c       Coconut Milk (unsweetened)
1 c       frozen Watermelon chunks
3/4 c    Cucumber (peeled and cut into chunks) (sometimes the skin has a bitter taste)
1 T       Chia Seeds
3 T       shredded natural unsweetened coconut
