Oven Dried Tomatoes

Here's a hug Thank You to Jenni at the Urban Poser for posting the directions on how to oven dry fresh tomatoes. 

I didn't have enough cherry tomatoes to do this with but had lots of small Early Girl varieties that were smaller than usual this year due to the extreme high temperatures and the dry weather.  This process worked amazingly well and you will be amazed at the concentrated fresh tomato flavor and the fact that they aren't store bought sun dried tomatoes.

My tomatoes had to be quartered because they were a little larger.





 Mine took about 12 hours to dry in the over on a temp of 180 degrees.  I even left them in the warm oven overnight to finish the process and here is how they turned out.  You can see the size that they were to begin with.  It's pretty amazing.


This is such an easy thing to do and knowing that it is completely organic because it came from my own garden gives me a huge sense of satisfaction.
