Avocado Smoothie

I love the weekends. Especially when we don't have any plans and I can play in my kitchen.  I have been looking at all the ways avocados can be used in recipes. So I finally took the leap and added one to a smoothie. Ok, I'll be completely honest, i only added half one in the first batch because I was afraid it would be yucky. This is the only time I enjoy being wrong. This smoothie was so creamy and delicious I made another, larger batch. My husband has declared this as his favorite smoothie so far.


1 - 1 1/2 c coconut milk1 whole ripe avocado - flesh only
3/4 c unsweetened apple sauce
1c spinach leaves
1 stalk of kale (leaves only)
1T chia seeds
The juice of one lime

Add the ingredients to your blender of choice and blend until smoothie.  Add more or less milk depending on your desired consistency. Ice can also be added if your ingredients aren't cold.
